Balcones True Blue is a unique corn whisky from the fast growing craft distiller of the same name. It is a corn whisky with a difference though.

It is made from atole which is a corn meal primarily from the state of New Mexico in the US. Atole is made using blue corn, which is grown across the south-western US states including New Mexico, Arizona and the home of Balcones, Texas. Blue corn is a rich and nutty corn that was originally developed by the Hopi, a tribe of Native American people. The atole, or blue corn meal, is toasted for cooking and is often consumed as a grainy porridge-style drink.

This traditional American recipe is used as the basis for Balcones True Blue. It gives the whisky a unique, nutty flavour. It is bottled at 100 proof.
