The distillers at Jim Beam do a lot of experimenting alongside their standard production runs. This experimentation adds to their knowledge of bourbon whisky and the distilling process, although very few of the whiskies produced ever make it to market. This is one that did.

Jim Beam Signature Six Grain is a blend of several bourbons made using different mashbills, each made with a different grain. The six grains are corn, rye, barley, wheat, brown rice and triticale. The production was overseen by Fred Noe, the current Beam-family master distiller at Jim Beam.

It went on sale towards the end of 2010 only in international markets. The first run comprised on 4,000 cases, about half of which were sent to Europe.

This is a very interesting bourbon whisky that is big but well-balanced. With all those different grains going in to its production, it is not surprising it is also complex -- busy, even. It was aged for six years.
