Knob Creek bourbon whisky is made by the Jim Beam Distillery as part of its Small Batch Collection. It is very well regarded and has won awards, including Bourbon of the Year in the Whisky Bible 2011 awards.

It is aged for nine years in charred American white oak barrels. This contributes to the flavour as the longer-than-normal time spent in the barrel allows Knob Creek to absorb more of the wood’s sugars. The barrel is stored in the centre of the rackhouse during the aging process where the temperatures are higher. It then goes into the bottle at 100 proof (ABV 50%) – the way bourbon used to be made as a matter-of-course.

Knob Creek is the creation of former Jim Beam master distiller Booker Noe. The name simply comes from a creek that runs close to the distillery. The bottle was designed to look like an old bootlegger’s flask.
