Balcones Baby Blue has certainly made a name for itself in its short life so far. It is made at the Balcones Distillery, a micro distillery in Waco, Texas. The distillery started life in the mid-2000s, being launched by brewing enthusiasts. They got Baby Blue on sale in September 2009 and it has already won numerous awards, including a double gold medal at the 2010 San Francisco World Spirits competition.

Baby Blue was the first whisky to be produced in the US state of Texas since prohibition. It is a corn whisky, made from 100% Hopi blue corn. The Hopi are a group of Native Americans. The strain of corn that takes their name goes blue once the kernels dry – the Hopi used it as a staple food.

The corn has a rich and nutty roast taste which makes Balcones Baby Blue unique. It is aged briefly in oak barrels but it is not as raw as most corn whiskies. This is much more refined – and complex.
